Leni’s Gin

Place all the ingredients — apart from the ginger beer — and the ice cubes into a cocktail shaker and shake vigorously 10-15 times. Put the ice cubes in the glass, then pour the drink in using a bar strainer. Top up the cocktail with the ginger beer. You can also simply prepare the beverage in the glass without shaking; however, the shaking releases the bitter-sweet flavours better, resulting in a more balanced cocktail. Garnish with fresh thyme and a slice of apple dipped in water and lemon to prevent browning.

  • 1 cl fresh lime juice

Pour the liqueur into the glass and top it up with the juice. Mix with a long-handled bar spoon. Garnish with sliced or diced apple dipped in water and lemon to prevent browning.

Put the lime and sugar into the glass and crush thoroughly in order to obtain as much lime juice as possible, combining these sweet and bitter ingredients. Crush the mint too, then add it to the glass without tearing the leaves. This helps to preserve the fresh taste without any bitterness. Now, fill the glass with ice, add the rum, and finish off with the apple juice. Mix the result gently with a spoon, trying not to damage the mint. Garnish to taste with a little fresh mint.

Ingredients

  • 10-12 mint leaves
  • 4 lime wedges
  • 2 cl sugar syrup or 2 teaspoons icing sugar
  • 5 cl white rum

Place all the ingredients and the ice cubes into a cocktail shaker and shake vigorously 10-15 times. Put some fresh ice cubes into the glass, then pour over the contents of the cocktail shaker, using a bar strainer. Garnish with an apple and strawberry skewer.

  • 10 cl Leni’s Apple and ginger juice
  • 5 fresh strawberries crushed in the cocktail shaker
  • 1 cl fresh lemon juice
  • 4 cl vodka
  • 2 cl coconut liqueur
  • ice cubes

lemon rind

Place all the ingredients and the ice cubes into a cocktail shaker and shake vigorously 10-15 times. Put some fresh ice cubes into the glass, then pour over the contents of the cocktail shaker, using a bar strainer. If you are using the egg white, first shake all the ingredients first without the ice cubes, then add them and shake again. This changes the consistency and creates a delightful foam. As soon as the cocktail is in the glass, squeeze a strip of lemon rind over it to flavour the drink with refreshing essential oils. Garnish the glass with the same rind.

Ingredients

  • 10 cl Leni’s Apple juice
  • 5 cl in/whiskey/vodka/Aperol/amaretto (For a sour cocktail, you can use almost any alcoholic drink that does not contain milk/cream. Choose whatever one you like best!)
  • 1 cl fresh lemon juice
  • 1,5 cl sugar syrup (or 1.5 teaspoons icing sugar)
  • 1 egg white (optional)
  • ice cubes

This cocktail is always served without ice. You can chill the glass beforehand in the freezer, or fill it with ice before you begin mixing the drink. Then, squeeze a strip of lemon rind over the cocktail to flavour the drink with its refreshing essential oils. Garnish with the same lemon rind and a slice of apple dipped in water and lemon to prevent browning.

  • 4 cl grappa
  • 1 cl fresh lemon juice
  • 2 cl sugar syrup or 2 teaspoons icing sugar

Red Leni's

Put all the ingredients together in a glass with a few ice cubes and stir gently with a spoon. Crush the mint and basil leaves slightly to release the aromas. When everything is mixed well, garnish.
